Almost every culture has its version of the sweet, deep-fried dough balls we know as doughnuts (think the Polish pączki or French beignet).

Menus now often boast gourmet creations, and donut-specific bakeries are opening all across the country with over-the-top, unusual flavors. But donuts as Americans know them come in two distinct forms: cake or yeast.
